I love any occasion that allows me to sample a variety of foods in small portions. Ergo, a nice brunch is one of my favorite ways to entertain. I often include two different quiches along with a couple of fruit items and, if time permits, a nice dip.

Ingredients
- 6 large eggs
- 1/2 cup chopped fresh spinach
- 1/4 cup red bell pepper finely diced
- 1/4 cup green bell pepper finely diced
- 1/4 cup orange or yellow bell pepper finely diced
- 1/2 cup crumbled goat cheese
- kosher salt and fresh ground black pepper to taste

Instructions
- Preheat oven to 350 degrees
- In a large bowl, whisk eggs
- Add remaining ingredients and whisk to combine
- Lightly spray a 9" cake pan with cooking spray of choice.
- Pour egg mixture into pan. Bake for 25 minutes, or until eggs are set and a toothpick comes out clean.
