Healthy Broccoli Bean Soup Recipe

Let me start by saying that if you are here to discover what my secret ingredient is, you will need to read this entire page before you learn what is in this healthy broccoli soup that gives the soup such a unique flavor. Having said that, if you make it that far and try the recipe you will not regret the time invested. I promise! As I am sure you know, most soups are made creamy with the addition of flour, cornstarch or other thickeners often paired with milk or cream and added cheese. This is what makes creamy soups so fattening. To keep this healthy broccoli soup, well…. healthy, we make it creamy by using white beans. Not only does this allow us to omit flour and dairy products, but it ups the nutritional value 100%. While I have chosen to use Cannellini beans in this recipe, they are not necessary. Navy or any other white beans will work equally as well. Next time I make this soup I may try garbanzo beans instead. The only thing I recommend is sticking with a white bean as any other color may produce a soup that appears less than appetizing. Picture pureed broccoli and kidney beans anyone? Yeah, let’s all try not to do that! Beans have long been heralded as one of the world’s superfoods. A large proponent of the Mediterranean diet; beans are the basis of any healthy eating lifestyle.

Benefits of Broccoli

Broccoli is an incredibly rich source of vitamin’s K, E, B6 and C, folate, fiber, choline and chromium – a necessary metallic that helps regulate blood sugar. Broccoli is known for its anti-inflammatory properties, its antioxidant benefits and its unique connection to the prevention of cancer. Broccoli is also known to provide cardiovascular and digestive support.

Instructions
  1. Add water, broccoli and seasoning to a medium sized saucepan. Bring to a boil, reduce heat, cover and simmer until broccoli is tender. About 8 to 10 minutes
  2. Add beans and salt to taste. Continue simmering until beans are heated through. About 1 to 2 additional minutes
  3. Carefully transfer half the mixture to a blender and puree. Move the soup to a large bowl and blend the remaining soup to puree.
  4. Stir in the fresh basil, top with cheese and serve warm.
