This dish is a easy, healthy vegan weeknight meal. You can change it up by adding tomatoes or onions. It is flexible enough that you can be creative and it all comes together in one pan.
Print Recipe Sauteed Kale, Mushrooms and Tofu
Heat the avocado oil in a large skillet.
Add the mushrooms and sautee until cooked. Add the kale, toss to combine, and sautee until the kale is wilted. Season with salt and pepper to your taste. If desired, adding a little red pepper flakes creates a nice peppery bite in the flavor.
Add the tofu and heat through. Serve immediately.
This easy, quick meal comes together in less than 5 minutes and is one of my favorites on a tired week night evening. The kale and mushrooms are both hearty vegetables so you will feel satisfied.
