Ingredients
- 1 ear of corn cut into chunks
- 1 medium red onion cut into thin wedges
- 1 small green bell pepper cut into chunks
- 1 small red bell pepper cut into chunks
- 1 small yellow bell pepper cut into chunks
- 1 small yellow squash sliced
- 1 cup mushroom halves
- 1 medium zucchini cut into large chunks
- 2 cloves garlic minced
- 2 tsp fresh lemon juice
- 2 tbs coconut oil
- salt and pepper to taste

Instructions
- Toss vegetables in a large bowl with garlic, salt and pepper, oil and lemon juice
- Place vegetables in a grill basket, or on a grill rack, and grill for 12 to 15 minutes or until vegetables are tender, turning occasionally
- For charred and smoky vegetables do not cut up the vegetables. Brush whole vegetables with oil and season to taste. Grill over medium heat 12 to 15 minutes or until charred turning occasionally. Slice or cut into bite sized pieces/
- For tender, juicy vegetables, wrap securely in heavy-duty foil. Close the foil tightly. Grill over medium heat for 12 to 15 minutes or until vegetables are tender, turn packet once half way through cook time.
