- 1-1/4 tsp olive oil divided
- 1 ring sliced onion thinly sliced, lengthwise
- 2 cloves garlic thinly sliced, lengthwise
- 1 tbsp wine of choice
- 1 tbsp soy sauce
- 1-1/2 tbsp balsamic vinegar
- 1/4 tsp dried oregano
- 1 large portabella mushroom cleaned

- heat 1/4 tsp of olive oil in a skillet until heated. Add onion slices and sautee until softened and slightly browned, about 3 minutes. Remove from pan
- add remaining 1 tsp of olive oil, garlic, wine, soy sauce, balsamic vinegar and oregano to the pan and heat until bubbling.
- Add mushroom caps, top side down and cook covered for 3 minutes.
- Turn mushroom and cooked covered an additional 5 minutes.
- Using a bun and toppings of choice, build your burger. I used a mayo ketchup mix for the dressing and topped it with the sauteed onions, tomatoes and spinach. Plate with the side of sweet potato fries and you have just created one very healthy meal. The best part of this is that the meatiness of the burger really helps you forget there is no meat involved. Simply delicious!
