- 6 large eggs
- 1/4 cup chopped yellow onion
- 1/2 cup diced tomato
- 1/2 cup chopped fresh spinach
- 1/4 cup red bell pepper finely diced
- 1/2 cup shredded cheddar cheese I used extra sharp
- 1/8 cup freshly grated parmesan
- salt and pepper to taste

- Preheat oven to 350 degrees
- Whisk eggs in a large bowl
- Add remaining ingredients and whisk to combine
- Spray a 12 cup muffin pan with non-stick spray
- Pour equal amounts of the egg mixture into each cup
- Bake for 25 minutes
