- 1 cup spinach Also works well with Arugula
- 1 small mandarin orange peeled
- 1/2 Hass avocado peeled and pitted
- 1 chicken breast precooked, a rotisserie chicken works well

- Combine all ingredients on a plate and spritz with a blood orange vinaigrette
Recipe Notes
This recipe is one of my own. I make it for lunch whenever I have a left over chicken breast and a mandarin orange on hand. Thanks to the serving of protein, I find this quite satisfying and it usually can hold me over until dinner. You can also enjoy it with a handful of walnuts.
