Healthy Vegetable Pie
The introduction of pies, and my favorite healthy vegetable pie, to the culinary world was a huge revelation! The flavor combinations and ingredient choices left so much open to the imagination. I have enjoyed chicken pies, fruit pies, beef pies, vegetable pies, the choices are limitless. We could eat a pie every day for the next month and never eat the same ingredient twice. For this reason alone, I am a huge pie fan.
Pairing a slice of pie with a nice little side salad makes for a heatlhy fulfilling meal that I would gladly serve to my family. Another bonus is being able to put ingredients together in a crust and clean up the kitchen while it cooks. When I am finished eating, all that remains are forks and plates. Can it get any easier?
Healthy Vegetable Pie
This delicious pie makes for a delightful, healthy breakfast or a light lunch. It is incredibly tasty and full of good for you nutrition. This recipe provides one easy method to get in your recommended daily amount of vegetables without adding a lot of calories, and that is a win win for everyone.

- 1 Pie Crust
- 1 tbsp Unsalted butter
- 2 shallots diced
- 1 red bell pepper diced
- 1-2 cloves garlic minced
- 1-1/2 cups spinach roughly chopped
- 1 cup sundried tomatoes oil-packed, but drained and chopped
- 2 tsp chopped fresh thyme
- 2 large eggs
- 1/2 cup half-and-half
- 1 cup Italian 5-cheese can substitute cheese of choice
- salt and pepper to taste

- Preheat oven to 375°
- In a large skillet melt butter over medium-high heat. Add onions and cook until caramelized,
- Add bell pepper and cook an additional 4 minutes, until slightly softened. Add garlic and cook an additional 1 minute
- Add spinach, tomatoes, thyme, salt and pepper to taste, stir to combine, and let cool.
- In a mixing bowl beat eggs and half-and-half together. Add salt, pepper and cheese and combine.
- Put the vegetable mix in the pie crust and cover with the egg mixture
- Bake for 45 minutes or until set.
This recipe is very similar to a quiche, but the minimal use of eggs and milk create a more meatier interior.
