Garlic Shrimp & Scallop Salad
Instructions
  1. Heat 1 tbsp of butter and 1 tbsp of oil over a medium-high heat. Season the scallops with salt and pepper to taste. When the oil and butter are heated add the scallops and sear for 2 minutes before turning. Sear the second side an additonal 2 minutes or until scallops are opaque.
  2. Add tbsp of oil to the pan and heat until very hot but not burning. Add prepared shrimp and cook until pink and cooked through. This should take no more than 2 to 3 minutes. At the last minute, douse shrimp in red wine vinegar. Promptly but gently remove gently from the pan, using a slotted spoon to drain.
  3. Serve warm with your salad of choice. Shown here is a pickled cabbage and carrot slaw with a balsamic reduction.
Recipe Notes

For this recipe I like to prepare my shrimp at least one day in advance. Clean and devein the shrimp.  Allow to dry thoroughly (if pushed for time, dry using a paper towel).  Season the shrimp with salt and pepper to taste and coat in the minced garlic.  Allow the shrimp to rest refrigerated over night. This is one of my own recipes. I also added a dash of balsamic reduction for the added flavor pang. This is a delicious seafood salad recipe that is sure to impress.
