Itís hard to imagine, but when I think of this easy pickled onion recipe I am at a loss for words. I try my best not to exploit the word delicious, butÖ These pickled onions are just delicious! The recipe is so quick and easy I make them all the time now. And they will last for a couple of weeks when stored in the fridge. These pickled onions can be added to just about anything and they will add a nice tart crunch to the dish. I adore them on my salads or you can add them on to your sandwich, top tacos or a nice steak. And did I mention just how delicious they are? And how easy they are to make? I am so hooked!

Quick Pickled Red Onion Recipe

To make this super quick pickled red onion recipe just mix up a bath of vinegar, water, sugar and salt and soak the sliced onions in it. If you leave them on the counter you can enjoy them in an hour. However, they are best when left to soak overnight in the fridge. I like to use a mandolin when I make these so that the slices are even and I can get these perfectly beautiful round rings of onion. I will make them in a mason jar. This way when I want to put them on the table I do not have to move them to a plate. They look gorgeous in a jar. I cut a clove of garlic or two in half and add to the jar for added flavor, along with some seasonings of choice.

Customized Easy Pickled Red Onions

Add a chili pepper for a little extra heat. Seasoning your solution to enhance your dish is highly recommended. If you are cooking an Asian inspired dish, adding a little fresh minced ginger to your onion bath will enhance the Asian aspect of the food. You can also season the liquid with some sprigs of thyme or cinnamon sticks. Whole cloves lend a rather elegant look and add a warm somewhat sweet flavor to the onions. The best thing with these pickled red onions is to experiment with your flavorings. This recipe would work equally as well with white or yellow onions. I just use red because the color makes a wonderful presentation. After a day or so in the fridge they fade to a vivid pink color that just makes the mouth water. And they do not disappoint, these red pickled onions are delicious! Did I say that already? But don’t take my word for it, try them yourself.

Instructions
  1. Combine vinegar, water, sugar, salt and thyme in a bowl. Whisk together until sugar and salt are completely dissolved.
  2. Put the onion in a bowl or mason jar, add the garlic, and pour the vinegar mix over the onion.
  3. For fastest preparedness, let sit at room temperature for 1 hour. Otherwise refrigerate for 24 hours.
Recipe Notes

If stored in the fridge these pickled onions will last several weeks. My favorite use is on top of a salad, but they work equally as well on a sandwich or burger.
