- 2 boneless skinless chicken breasts halved
- kosher salt to taste
- 1 Tbsp Avocado Oil
- 1/2 lb fresh mozzarella cheese cut into 4 slices
- 2 medium tomatoes sliced
- 2 tbsp balsamic vinegar reduced
- fresh basil leaves chopped, for garnish

- Clean and pat dry chicken halves. Season with Kosher salt (and black pepper if desired).
- Preheat oven to 450 degrees. In a oven proof skillet, heat oil over medium high heat. Brown chicken on all sides.
- Transfer skillet to the oven and bake an additional 15 minutes or until a thermometer reads 165 degrees.
- Top chicken with cheese and tomato and bake an additional 3 to 5 minutes, or until cheese has melted.
- Drizzle with balsamic glaze and garnish with the basil. Serve immediately
We all know a simple chicken breast can get very old very quickly, so the challenge lies in keeping it interesting. The many varied ways you can prepare it will give the feel of a whole new and different dish. That being said, baking chicken with cheese is not my normal go to recipe. I make an effort to steer away from dishes that require cheese (although I love it) because cheese can be quite fattening. However, this recipe calls for a slice of the relatively low fat fresh mozzarella, so I gave it a try. And I am glad I did. I will save this one for special occasions only, but it was really very good.
